I would advise you to start at 1 and just go through it chronologically until you can't take it anymore, which should be somewhere around Brohood or Revelations, depending on how many samey Ubisoft games you played before

Thats hard to say because 1 is repeatitive as fuck. 2 is really good and 3, while trying a lot of new things got shit on hard. It isn't horrible, but it isn't anything close to 2. While its recommended to play them all, they do a good job of filling you in at the start of each game in case you didn't.

What are typical enemy types in HoS and BaW? I'm just asking because I ran a sign build in the main game and it was a bit jarring to go from stunlocking everything with Igni to not being able to do jack shit whatsoever against the end game bosses and enemies like golems and gargoyles

This game is hard as shit. These levels are retarded huge, the enemies are insanely tanky unless you can pull off a headshot, which is hard because they have really jittery animations and the crosshair is misaligned (the fuck m8). If you don't headshot the majority of enemies you encounter, they will eat all your health and ammo in a matter of seconds. I just ran out of lives in the fucking mantis mothership and I feel like I'm about to have a stroke. I should not have picked this game up while trying to stop smoking.
It's still a great game, though.

Just ran through and beat Castelvania Curse of Darkness. I remembered renting the game as a kid when I was sick and getting pretty into it but never beating it or renting it again, so I emulated it and the game gets pretty goddamn awesome once it starts rolling. Fighting along side summons that you get to custom level is neat, plus it's really goddamn easy to grind up new summons from level 1 to your level.
I ended up grinding to get the fire dragon and corpsey and they just shattered the end game bosses. Plus the rival fight was really neat and had like 3 different phases that required different tactics for each part.
The only real issue with the game is the fact that you move crazy slow and areas are all big and very boring to explore. It can get grating but beyond that it's honestly a really goddamn fun game, unsure why people kind of shit on it.

Only like a third of them respawn, but it's still a pain, especially when only a select few ammo and health drops respawn alongside them. It's even worse with all the backtracking you have to do, because the levels are designed like mini-Metroid games.
