There's a basic horn that costs nothing to use but it takes 3 toots to work and the healing is shit. The other horn takes 2 bars and only 2 toots. From what I could tell it was between a potion and mega potion in terms of healing. It wasn't great. I think I'll avoid cats until the full game. Or someone rolls a full cat room.

4U lacks a lot of 3rd gen monsters and has many 1st and 2nd gen ones accompanying the 4th gen ones. It goes up to G-Rank and so you can spend a lot more time playing it.

MHGen overall has a mish-mash of different monsters from each gen and only goes up to high rank. Apart from about six entirely new monsters, some new subspecies are added to change things up a bit.

The most notable 4th gen monster absent from MHGen is Nerscylla and the G-Rank subspecies of it and practically every other MH4 monster that not a lot like that much. There's also some theme park elder dragon rides like Dah'ren Mohran, Dalamadur, and Gogmazios absent but fuck them. Also there's Jaggi hopping around in X/Gen but with no Great Jaggi in sight for some reason.
Of note, Charge Blade also got a partially gutted moveset from 4U to X/Gen, and both games don't have a particularly flash 'endgame' if you want to do more than just hunt for fun.

Sword mode can't AED from a shield thrust, only a shield charge.
Shield charging is now two different tiers of yellow and red. Yellow is weaker and is what you get when you charge from sword mode, red is gotten from cancelling an AED from axe. Notably, blocking normally with red boost invokes impact/element damage guardpoints did in 4U.
Guardpoints changed, if the hit doesn't warrant you taking knockback you just go through the entire action normally, so there goes your easy AEDs. They are however given a small visual effect so their presence is more obvious.
Striker adds a guardpoint to the start of a lunge and removes shield thrusts.
Adept adds a guardpoint to the start of the charging attack, removes yellow boost for a perfect guard in sword mode allowing you to get red(!) boost with X (even if you don't hit the monster) or fill up some phials with A. Axe has the dodge every other weapon has.
One change that pisses me off is that Super AEDs share the same audio effect as regular AEDs. The super version also no longer has shockwaves.
CB's Energy Blade art is the only one really worthwhile. Oh, and there's obvious motion value changes.

Just because it isn't called G it doesn't mean it doesn't have top tier end-game content.
Savage Jho, One-Eyed Nargacuga, Ember Dinovaldo, Gold Rathalos, Silver Rathian, Toxic Rathian, etc etc will have you pretty busy for 10 levels each, twice or more if you want their armors fully upgraded.

I'm warning you now, these games are known for their significant grind. It's just an excuse to keep playing the game for the hunts, of course.
Monster Hunter should be treated like an Asymmetric PvE Fighting game. You pick your weapon (your character), then pick your monster (your opponent), then get transported from the village (character select screen) to the hunting region (fighting arena) to engage the monster proper.
As for gameplay, like a more traditional fighting game, it focuses on knowing the limits of your chosen moveset (which I promise you, WILL quite limited) and not getting too greedy on your offense, while also learning the monster's moveset, observing its tells and figuring out where its openings are and how long they last, and learning to predict what it might do. Furthermore, preparation is a huge part of the game so spend significant time simply arranging your inventory for the next hunt, even with item sets.
It's going to be important to note that not only is Monster Hunter a huge timesink where it isn't uncommon to hear of 500+ hour playtimes, but also that it will be a game where the guides are your friend.
I mean, you could probably go without ever, ever using the wiki, but significant improvement will come from understanding how skills work, how your attack power works especially with regards to exactly how strong each of your moves are compared to each of your other moves, how your damage matchup against enemy resistance zones works, and so on.
This isn't a game where you can dodge cancel out of every single attack you make at a moment's notice. When you attack, you must be certain of your choice, for that animation WILL play out. There are some moves where the wind down animation after the attack can be shortened by rolling out, but it typically only represents a small portion of the animation.
