Use trickster. It gives you plenty of escape movements. Double jump+air dash can dodge most boss atacks

equip shotgun and shoot ice from dog's heads -- then wail on them with sword
if you don't want to jump -- just break the ice of it's paw and keep slashing it instead of heads
oh and yeah, did you picked golden mode when you started the game? gold mode allows you to restart from checkpoint where you died from in yellow mode you have to restart entire level
use trickster but for boss fights like cerebus use swordmaster.

Don't double jump though. The first jump has invincibility frames until the peak of the jump. Shooting star/Air dash also has em too.

Welp I beat it, had to shoot its heads a fuckton because it would always swipe its claws way too fast when I tried to approach and slash it.
I found that rolling (R1 + X) helped me more than jumping
Also, the cutscenes are pretty great.
