The secret to destruction in Oblivion is, unlike Morrowind, you don't get taxed for having multiple effects on the same spell, but cost increases polynomially with magnitude. So it's always better to have a spell that does damage of all element types than one, and at higher levels it's better to build weakness effects into spells.
There's some voodoo with how you're supposed to order effects in spells, based on how effects overwrite and interact, but I don't quite remember the details.

Vanilla Morrowind has unplayable dice-rolling combat that isn't worth being slogged through for the pretty good writing and fun areas to visit.
Vanilla Oblivion has plastic-y models and hokey textures (and molasses combat) that don't warrant a second playthrough for the fun fantasy writing.
Vanilla Skyrim is Vanilla Oblivion with the fun fantasy writing and enjoyable quest designs of the previous two games replaced by a thick grey coat of MUH EDGY GRIT and a MUH DRAGONS IN SKYRIM spectacle-focused main plot line that don't warrant a second playthrough for the fun Civil War line, alright combat and decent visuals.

Just expect the endings to be shit. You can always do what I do, don't end it. Wander around your (now modded) game adventuring with your AI companion (Boone, always Boone) looting and cleaning house, making your own ammo, cooking your own meals at the fire, etc.

A man can dream, but my acrobatics is only like 90 at the moment. The more important thing is that unarmored and hand-to-hand scale well above 100, and carrying nothing (except potions) helps you go fast. I feel better about having a skill uncapper than abusing enchanting for fortify skill everywhere.
