I can't remember which NG I played but I struggled with the first boss on the hardest available difficulty. I could recognize his unblockable attack but had no idea how to avoid it.

No, from what I played of it, the level design was boring through and through. To be fair, I only played like 3 hours or so of it, because I just didn't feel like getting good at it if it meant dying of boredom on the way there.

Not really, there is a delay when moving in any direction from a standstil if you don't use the dodge move.
Turning around has a high turning angle.
It takes far too long before Ryu gets up to speed when he starts moving from a standstill.
You can't move while aiming your bow and the camera zooms in so much that you lose all peripheral vision.
From almost every point of view, NG's controls are clunky and the mechanics are dated.

Why would it ever be an issue to move fast from a standstill if you're not trying to dodge something? and even if you just don't feel like moving slower from a standstill, you could just dodge like you said. Also, Mario 64 does the same thing and that is one of the most responsive 3d games I and i'm sure plenty of other people have ever played.

Sigma is basically the same as Black. You'll get longer loading screens but better visuals.
Sigma 2 has much better models and graphics but suffers reduced gore and blood and less enemies on screen, though they have bigger health.
Elitists and Cookiefags will tell you that you NEED to play the originals but really don't bother, Sigmas are fine themselves.
If you crave for more 3: Razor's Edge is not as good as the ones before it but it's still a competent game. Don't play vanilla 3 though.
