Assuming you won't have space for a mouse I'd say strategy games in general. Something like Crusader Kings 2 is a game you could get a lot of fun out of. Dorf Fort if your eyes can handle it for 10 hours, although other passengers might think you're trying to hack the plane.
Maybe Fallout 1, 2 or Tactics. All of those are great.
Also download an emulator and a bunch of ROMS, if you get bored you can always fall back on a library of classic PS2 games or something.
