Give Fran any class wielding a hammer.
She has the best scaling and animation for them and it turns her into a tanky DPS monster right up to the final boss if you slap on berserk and haste.
You can beat nearly all of the bosses by just having her run damage while you setup a party member to heal/buff and you sub in debuffs/dps as well

Plot continues from the X-2 ending when Tidus comes back
Just have the farplane getting destabilized after that and a ton of souls getting thrown back into the world
Auron, Shuyin, Lenne, and Jecht come back and after having a boss battle against them you can recruit them into your party
You band together with your old friends and have a fuckhuge party by mid-game and decide to launch a full-out assault against the source of evil in the farplane
Attack goes to shit and over half of your party members are killed and consumed by the evil in the farplane
Shuyin, Tidus, Rikku, Yuna and Lenne remain
Gameplay can have up to 5 party members at the same time so it works out
After this they have to flee and the entire world is getting destroyed
Eventually they lose again against the evil and decide to follow Shinra's plan of leaving the planet and going to another one and start over
At the ending the guys decide to hold off the final assault from the evil presence and learn it's an alien lifeform know as Jenova
They eventually die but manage to give the girls barely enough time to escape
The final boss battle is with the 3 girls against Jenova, at one point Rikku dies, and Yuna and Lenne are fighting
They use the power of love and friendship with all their previous companions and lovers to summon the Ultimate Aeon, Ultimate Aeon manages to defeat Jenova
The world is still destroyed so they leave for Gaia from FFVII
Post credits scene shows Jenova still alive that completely consumes the planet

The original FF12 music is constructed in a MOD style format, their instrument samples aren't available in a higher quality. It's easier for them to remaster the tracks from scratch than to update the existing ones.

The original music wasn't compressed though, it was MIDI music. It's never going to sound better than it already does.
They could, however, allow an option to have the OST version of the soundtrack, which - while not using a real orchestra - used more realistic sounding synthesizers that would be too much for the PS2 to play back in real time.
