It's Dark Souls with faster combat, no shields, and a different coat of paint, but it lacks a lot of what made the original great.
Hell, after starting with Demon's, Dark Souls 1-3 and Bloodborne I can safely say every single game is incredibly over rated. I loved Demon's but knew it was flawed. Dark souls had this whole "tough but fair" nature that a shitload of people spouted but that's not true. A lot of Dark Souls onwards level design and boss fights are strictly full of bullshit designed exclusviely to fuck over people.

Bosses can oneshot you at 30 VIT and have oversized health pools in several instances (mostly DLC and Chalices though, in the main game most of them have exploitable weaknesses and the size of their health pool is deceptive.)
Having to grind for or buy healing items and bullets is unacceptable. This is a problem from Demon's Souls that was already solved and it's back in this game, simply because it doesn't make sense that you'd get vials and bullets back at a lantern / you can't rest at lanterns in general. Make it a fucking blood fountain with bullets floating in it if you have to, it's just a dumb change. Having to go back to the Hunter's Dream to actually refill them is dumber still. Even if you never run out of vials the fact that it is even a possibility is flawed design. It's a change made for internal consistency that makes the gameplay much worse.
You're right about the upgrade mats, though the lack of blood rocks unless you're grinding (for drops or for insight) is still somewhat of an annoyance.
Your point about the weapons is largely true and they're generally much more varied this time around (though there are a couple borderline reskins) but there's a pathetically small number of them available by exploration. Most of the time you get a badge which lets you buy a weapon for a ridiculous quantity of echoes, which is a bad system - it only works if you know exactly what weapons you want to use, and actively punishes you for testing out weapons, or trying to sequence break and get a badge for a weapon you want very early (for example, killing Eileen to get the BoM early requires a lot of echo farming or progression with the starting gear.) The gear progression in Bloodborne in general is skewed towards the back half of the game, only there is a very small amount of content left to do once you are able to get your hands on some of the weapons.

While all the Bloodborne weapons are unique I would say that the number of weapons is fairly similar to the amount of different weapon types in the other Souls games. Additionally the other souls games have many different types magic which Bloodborne sorely lacks. So, I wouldn't really put the amount of replayability in Bloodborne that much above the other Souls games (or even higher at all, honestly)

They both have online components, they are both exclusives, and lastly the PS4 has a far larger user base. That is hardly any excuse.

Tropical Freeze, Mario #100, Pikmin just aren't console sellers. PS4 is coming into its own now with Uncharted 4, R&C, Bloodborne, Infamous etc
All consoles have pretty weak libraries right now (though Bloodborne personally makes me think a PS4 is worth it for my own needs) but the PS4 only stands to improve whereas the Wii U has long since peaked.

I think it's a similar problem in DaSIII with the caestus.
I would say FROM has handled parry and riposte risk/reward incorrectly. In BB and with the caestus there is no retaliation for a wrong parry, either for distance reason or a lack of recovery frames. One is an easy fix, in BB they could have handled it a bit differently. Like to get a true parry instead of just a stagger you had to be in close range, or something like it, so the gun could still be visually and mechanically different from a shield but have the same drawback
