Gimmicky boss fights at least add variety, in terms of AW and Yhorm at least.
It's really clear FROM is just out of ideas, and theres no shame in that. Steven King's admitted the idea well has run dry and that's fine, because he has some amazing works out there.
If FROM announced a new souls game I could pretty much guess the boss content.
