the idea of a backstab is that you attack a vital part of a person. go and tell me a vital part of an undead. you just have to slash it to pieces. and you're not gonna do it with a single stab, no matter the direction it comes from

It's more about having the opportunity to freely attack a vital part of the body in addition to the defense stuff. Undead don't really have such things ( especially skeletal ones) as they are just animated corpses. Not sure what's up with vampires and stuff tho.
