Post obviously good gameplay ideas, I'll start:
a combat arena third person game based around Attack on Titan "gear" gadgetry - Wipeout-like speeds, lots of splatter danger, supersonic swordfighting, with added use of grapples and guns (with one bullet).
Also a mode where a player takes control of the Titan or a powerup.
