I remember back in high school, when I said that I would have wanted to see a Warcraft 4 at some point, my friends who were invested in all things Warcraft (RTS games, WoW, books, etc.), told me a 4 was impossible because of all of the lore, story, and whatnot that the books and WoW introduced. At the time, I thought it was just a silly reason for not continuing the RTS side of Warcraft and that they would have gone through with it at some point, but looking back now, maybe they were right about it. Even seeing the OP list

Forsaken being Horde and night elves being Alliance were both extremely stupid moves that went against all previously established lore for those races.
The forsaken are just undead humans. Humans from Lordaeron no less. Each and every one of the forsaken has a deeply personal reason to hate the orcs. Many of them were killed by orcs in the war and brought back to Lordaeron to be buried. Sylvanas also had a reason to hate the orcs, and would never have allied with them. It was like if they had made Malfurion join the Legion or something.
Night elves on the other hand, are even more stupid. While the forsaken had to choose between standing alone or joining the Horde, the night elves had no such limitations.
They had no previous contact with orcs or humans, and they hated them both equally.
The only race they had contact with were the tauren, and night elves and tauren have been extremely close allies since before humans even existed.
So what do they do when the whole world starts picking sides and it's their turn to choose? Betray their only friends to cozy up with their worst enemies obviously!

Except they can. There's all sorts of ways to include a customizable character into a continuing story.
You can go with the elder scrolls route and have personal details about the hero be forgotten.
Or you could go with the Dragon Age route and establish a default character, and then potentially allow players to customize them to match their character.
Also, it's implied that the player character ia the only constant in the story. For instance, out of the 25 people who killed the Lich King, your character was the only one who went on to confront Deathwing. The others were just random adventurers with their own stories. Blizzard could easily establish a canon character for each race and class, and then divide the glory between them, so only the human death knight was there for ICC, but dwarf warrior and gnome mage were there for Ragnaros and the night elf druid and blood elf rogue helped down Deathwing.
