The deep is the opposite of chaos like dark is the opposite of light.
So what did Aldrich have to do with the deep? He was trying to end the age of fire and start the age of deep? What is it? What's the difference between deep and the abyss? Did they just have the two confused?
Souls is kind of annoying with it's lore. Yeah, it's great that it's esoteric and you have to dig into it, but you should ultimately be able to figure things out. Souls lore always gives me the impression that they're dangling carrots that you just can't ever get, it's insubstantial, it just has the impression of substance.

Everything in Souls is basically this. None of it really matters much, it exists to make a setting for the game and nothing more, there's rarely anything deeper than what it flat out tells you.
