Just as an example, pretty much any enemy with an elemental weakness has the evade skill for that weakness.

FES is full 3D instead of menu based exploration. P3P is honestrly faster an more convenient in navigation, but in exchange you lose a lot in characterization and character interactions. For a character heavy rpg that's a big loss really. If you are a minimaxing fag who needs to do great in combat and couldn't care less about characters then P3P may be better for you.
And yes, all female slinks are romantic, and Social links can get reversed way easier (and permanently broken as well) than in p4 if you fuck up.

I found several Tartarus bosses to be challenging, namely interpid knight, sleeping table, the 3 hell knights or whatever they are called, and there was one other one with three of those stone statue things with swords that spammed blade of fury and tempest slash.

About all you can do is save before doing an S-Link and load if it forces the relationship. I hear P3P doesn't penalize you for having multiple girls, but I haven't personally tried it.
In Portable, you can control your party and, notably, play the Female protagonist, which changes perspective, dialog, slinks, etd. Excellent for replayability.
But you can play The Answer and pick your weapon in FES.
Note that Portable has restrictions due to hardware, mostly expressed in >>339367245

FES If it's your first go, though if you can live with the lack of 3D overworld and no 3D models in cutscenes then it's technically the definitive gameplay experience with skill cards and direct party member control. In FES and as male MC all female Slinks become romance at one point, but they're set in stone once you max them and you can move on to another bitch. As female MC it's like P4 where you reach a point and you either activate their romance flag or friendzone them.

I never unlocked Monad. I just grinded Yukari, Junpei, and Aigis to 75. I did that just because I wanted most of their skills though, I feel like I could have done it just as easily around 70.
Also, I just saved up all of my stat cards throughtout the game and used them on one persona at the end. He ended up having 99 str, mag, and luck and about 70 end and agility. Nyx wasn't hard, it was just super long.
