I can't defend this really, alchemy and enchanting are good, and so is non combat magic. You can use it to assist yourself in fighting and non combat situations, but destruction is pretty mediocre.

So I'm a faggot that started the series with Skyrim and I want to go back and experience the earlier games (read: Morrowind and Oblivion.)
I like mages and most enjoyed my Skyrim playthroughs doing Illusion and Conjuration since Destruction was basically garbage. How are these schools or their equivalents in the other games? I had great fun making everyone fight each other while summoning and turning invisible, but that was basically all you could do. Do Morrowind and Oblivion have better options? Like Charm Person and so on?

You can raise it even at really low levels just by sneaking around in dungeons, sneaking up on animals in the wilderness (scribs a best) or finding a place in town where you're hidden from people and continually moving; that's one upside to it being a simple check.
It's pretty difficult to successfully pickpocket or sneak-attack at low levels, though.

But if you are doing only those things you listed and nothing else you might want to use alchemy WITHOUT breaking it. If you just make potions like normal and dont cast spells of fortify intelligence and alchemy before making potions youll be fine. Also dont ever sell potions you make from store mats, only from mats you find. Store mats are ok to buy if you actually plan on drinking the potion because alchemy is also a good source of unlimited gold.

Breton Apprentice is better for most builds, but Altmer aren't that bad.
Altmer weaknesses are really only pronounced at low levels (when a lot of magic does heavy damage or instant death due to low character health) and at higher levels, particularly Tribunal, when it can be mitigated relatively easily. You also get a lot more Magicka, but it's not really /that/ useful unless you have a Magicka-regenerating mod installed.
Pity you can never overcome the disadvantage of being an Altmer.

The worst part of the combat isn't the start (Even though that is bad) it is how it tops out.
By the time you reach level 20+ there is no more sense of danger.Nothing in the game world is a challenge and it becomes a walking sim.
