I've never played a Dragon Quest game and for some reason I feel drawn to try pic related.
Is it a good starting place? I don't like starting with the "best one" and I like the art on this one.

6 takes place in the same world as 4 and 5, but all of them are many years apart. They're really only loosely connected, so it's not a huge deal, but you will miss out on some things playing them out of order.
That said, 6 is often considered the most difficult game in the series, though it's a pretty easy series overall. I would personally start with 4 and work my way up in order from there, or if you like older RPGs, start with the SNES versions of 1, 2 and 3. 3, 5, and 8 are often considered the three best games.

My opinion, at least. 8 and 4, though, are probably the easiest to get into, as they're both meant to be that way - 4, 5, and 6 are considered a sort-of trilogy all set in the same general world, and 1, 2, and 3 are all directly related to each other.

6 is a good place to start. 4, 5, 6, and 8 are all excellent games and good places to start. 1, 2, and 3 are a little too dated in my opinion, for 7 you might as well wait for the remake and 9 has good gameplay but everything else is kinda mediocre,

Why not? It's just like any other Dragon Quest game but longer, you go from town to town saving them and piecing together the overall story. It's really well done and has the best story of any DQ game in my opinion, it's just not a game that can be beaten in one sitting, you absolutely have to chunk it out and be ready for a long haul.
Also the shard gathering wasn't really at all tedious like people in the thread are saying, 90% of them are in your direct path or found with a little exploration. Only one time in the game did I have to look up where one is because I didn't explore part of an earlier town.

1 through 3 are kind of like FInal Fantasy 1 in the sense that the characterization and story are still in their infancy

You could start with 6 but I wouldn't recommend it, don't know if you like job/class systems which is a major thing in the game. For people who are interested in picking up the DQ series I think they should start either at the first one and play up or start at DQ 5 OR 8 to get the some of the best the series has to offer.
