If you swing your sword while you are close enough to the boss, he will sometimes be hit by your sword. Every time your sword hits the boss, it will do damage to him. Do this repeatedly until that little gray/red bar underneath his name is completely gray, and he will no longer be alive. Just be careful, because he is able to use this same technique of swinging and damaging the other character to you. I hope this helps.

Did they actually make him a boss that time around? Covetous Demon is my personal pick for worse boss in the entire fucking series. Shit level, makes no sense, terrible moveset, just really really bad.

I'm vaguely certain that when he ate your equipment, he would keep them until you killed him at which point you'd get all the stuff he ate back. It was probably deemed a bit much, and that's why it just puts it back in your inventory.

At least deacons and (kinda) Magus switched it up with multiple smaller opponents (granted this is coming from someone who thought the royal rat vanguard was really fun). Covetous could have been replaced by putting the bonfire a few rooms earlier and the game would have been better for it.

I imagine he'd keep it until you killed him. But again it was probably a bit too much. Alternatively they could've returned your possessions upon death but in a broken state. That would've been neat.
