So, I've never played the Fate visual novels, but after watching Unlimited Blade Works and Fate/Zero, I'm thinking about trying them out. Are they worth the time/trouble?

Fate/Stay Night is fucking brilliant. There really is nothing else like it. It's flawed sure, but it ties up its loose threads nicely and each route you finish feels satisfying as fuck. The best thing about Fate is how different all three routes manage to be while utilizing the same settings and characters. There's a lot of room for lateral movement when it comes to development and other sideways revelations that might only pay off after you've played the full game. I love it to bits, but I can see why some people wouldn't. Nasu's writing style is just odd. He sets typical anime stuff against this fantastical urban fantasy setting replete with fluffy prose and genuinely good moments of suspense and drama.
It does have it's problems, though. The pacing can feel scattershot at times, and the first route (Fate) is a bit of a slog compared to the others. However, I submit that the Fate route is a large part of F/SN's appeal: seeing just how much completely disparate storytelling elements can be pulled from this clusterfuck that absolutely should not work and be re-arranged and put back together in another route is why it's so good. Fate was the ANIME bullshit, UBW was the ANIME bullshit kicked up to 11, and HF is the ANIME bullshit kicked up to 134 and pumped full of hallucinogens and methamphetamine. It's worth playing, but if you go in expecting Zero you are going to be disappointed.I am very drunk and I don't care how much of a pretentious tosser I sound right now. Fight me.
Play Tsukihime if you haven't, too. That shit's fucking cool, but Arcueid's route is slow and boring so slog through that and then you'll get to the madcap, MS Paint-tier goodness.

So much of the cast's motivations and machinations are only made clearer through text. The Ufo UBW anime was a piss-weak, undercooked version of UBW, especially considering all of the other character development that was missing from the Fate route.
You fucked up watching the anime series' first. By watching Fate/Zero, you spoiled Heaven's Feel (the most batshit insane route of the game) and by watching UBW you spoiled yourself entirely and will most likely lose the motivation to continue on to unlock HF halfway through the route because you already know what happens. All that's left is the Fate route, and that's considered the "exposition route" and the worst in the game by a lot of people.

If Saber is your favorite then you should play Fate/Stay Night, simply because of the "Fate" route which is Sabe-centric. UBW is more focused on Rin.
