Unreal Engine is pretty stable, I use it at the studio i work at.

The only problems that i'll get is when i'm sleep deprived and write infinity loops that it detects!

Unity don't do that.

For the most part he's been insistent about getting his games to run at 60 fps. Mgs v and mgs 2 were developed to run at 60 fps on consoles

And this is where I learn something today. I always thought Engines primarily determined the look of a game. Hence you can usually tell an Unreal game just by looking at it. What should I educate myself on?

I wouldn't mind if he uses the Frostbite engine. I was impressed how the engine can be used in multiple settings after seeing Dragon Age and Battlefront, but EA would probably screw him over.The Unreal engine isn't bad as well, but it just feels a little to plastic at times.

You can probably pick out a lot of Unreal games because the stock assets (shaders, lighting set ups etc.) are fairly good. This was a particular issue with UE3 last gen, and with shitty indie games in general that all look like they took very little effort in Unity, built using code assets and plugins from the store by bad artists (pick related).

That is why people pick certain engines (indies at least), ease of use, ease of learning, ease of workflow, and cost. I suspect only workflow and cost are really a concern in AAA, which is why you still see studios bothering to use their own engines rather than just getting Unreal or Unity. CryEngine is supposedly a bitch to use without help CryTek won't give you, which is why it isn't popular.
