Animal skull are not only tough as shit, they're also full of angles and other weird shit, you have a better chance killing it without too much suffering by aiming at the lungs/heart than the head.

I recall Prime Hunters had headshots, but they just did a bit of extra damage rather than being one hit kills. While it could happen in multiplayer, I don't think it was possible for Samus to be headshotted in the single player game, though.

I mean, you can, but there is literally no reason to. Heart/Lungs are far bigger targets and get the job done, and if you somehow miss there is less chance of heavily crippling the animal.
Head is nto only the smaller target but there is a risk of hitting the jaw of which is pretty shitty- painful and if the animal survives it's bound to die of hunger because it won't be able to feed.
