The problem with Blitzball is two fold. First they gimp you too hard in the beginning for you to actually enjoy it. Essentially until you have the airship and know who to look for, your team will be trash. If you tried playing it right after the tournament, the Glories or especially the Psyches are damn near impossible to beat. I just finished a few weeks ago beating all the games for Wakka's overdrives/sigil and considering the best way is to constantly reset, you get to see how the base level game is. The Psyches goalie's starting CAT is HIGHER than Tidus's SHT with the Jecht Shot. You have to get lucky or reset, as if you don't get the goal, you can't win and Tidus won't have the HP to try again.
Secondly, the system they put in place to learn your key/new moves was a bad idea. If you just levelled into moves, or developed characters with items or something like the creature creator, it would have made the game much better. As is, once you get into the higher levels, the game is pretty much auto-pilot of kiting the defence, passing to your main scorer and using a special shot for a goal. It's not all that deep.
