They're source ports specially made for DOOM that you can get for free, Chocolate offers the best old school experience while Z/GZDoom is able to have certain features for a lot of mods and wads.

The Steam version runs on DOSbox which would be Chocolate but paid while the BFG version has certain changes from the original.

The original creators of the game wont care if you get the game from free with source ports since they dont even work at ID anymore

it holds up, but keep in mind if you play it 100% vanilla, that means absolutely no aiming, and if you REALLY want to go hardcore, then KB only.

modern versions of Doom 1 and 2 can allow you to aim freely with the mouse, and some allow you to jump, although that is an unnecessary feature, since the games were not designed with a jump in mind

Played it for the first time a couple of months ago and fuck yeah it holds up. Probably the most fun I've had with an FPS. It was also the first time I played an FPS with mouse and keyboard since I'm a consolefag and now I don't want to go back to the controller.

use chocolate doom if you have the steam version and want to play the game as-is but with a mouse easily (also, it's not emulation, it's a straight port of the source as released to modern platforms), crispy doom if you want something that's pretty accurate, but a tad nicer looking and with support for Romero's new Doom wads (all engine hard limits are relaxed)
or go look for "novert.exe doom" on google and configure your autoexec so vertical mouse movement doesn't fuck with your position if you're going to play it with the original doom.exe provided with the steam version
gzdoom is fine I guess, if not terribly accurate and it'll color your experience a fucking lot -- disable vertical mouselook and unbind jumping, none of the stages are designed for it, gzdoom is mostly for playing mods, if you want to play Brutal Doom at some point, download this

tl;dr: chocolate or crispy doom to play the game as intended, gzdoom if you want to play any mods at all

People give Doom 3 a lot of shit, but it's not terrible if you look at it as a horror game. Plus Resurrection of Evil is alright, and that was a result of Doom 3.

Quake was okay for the first 2, then 3 was pretty crap, and 4 basically copied Doom 3 but did a worse job.

First you download the source port, then you go into the Doom folder and copy the WAD file to your source port folder. You should be able to run it easily.

put in in the folder with chocolate doom
run the setup program, set your keybindings, screen resolution, mouse controls, all pretty normal stuff
when you're done, leave setup and just run chocolate-doom.exe to play the game

that's literally it, you really can't fuck it up too badly
if you have doom 2 and want to play that, copy that program folder, delete the doom.wad file and paste in doom2.wad

gzdoom is about the same too, except you configure shit with the same program you play the game with, and there's a bunch of shit to configure
also, you may or may not want to look for a wad manager if you get into mods
