As for being the hardest 3d game, I would argue Das2 has it beat in the dlc. Some of those areas are pretty brutal compared to stuff in Das.

I must be pretty shit, then. I'm stuck at the Bell Gargoyles, no humanity left, no souls. Last few attempts with firebombs were close, but not cigar.

What gear are you using? If you're a super scrub just grab the drake swordyes I know it's for scrubs, but I don't think Das is active enough for it to matter anymore
If you're Str use the Zweihander from the cemetery
If you're dex kill the merchant near the Undead Parish bonfire for the Uchigatana
If you're Int/Fth/pyro just holy shit stop sucking so hard and use your spells
And for the love of god upgrade your weapons. It should give you a bigger boost to your damage.

NioH is already way harder to master than Souls. You need to play with more elements at once (not only is the stamina system more complex but you have 3 stances to consider, all of which do vastly different things aside from attack speed/combos)
In Souls games you do fine just by dodging towards the enemy and spamming R1
But really, I think Ninja Gaiden2 on its hardest difficulty still remains the hardest combat-heavy 3D game.
