Link was intentionally designed to be a blank slate self insert but half of the games players can't self insert as him. Meanwhile you can't argue he's an actual character built for the story either since in most games he's a mute everyman with no history, only the most basic of motivations and has maybe one or two expressions, while everyone else in his universe only continues to get more story-centric roles and heavier charactization.
He's trapped in this gray area thanks to Nintendo's refusal to commit to either direction while simultaneously claiming to do both. It's caused fans to develop different ideas of what the series should be.

It's not even so much the cave in, but it would mean Link(le) feels even less organic and a part of the world than he already does. Zelda 1 isn't hard at all. It's one of the easiest games on the NES, especially if you read the manual so you know what you're doing at the start.

I'll be completely honest here. Why does anyone give a single shit about changing Link?
Link is a nothing character. He has the depth of an oldschool Dragon Quest protagonist or a Pokemon character, he's as bare minimum as you can get even in games like TP and SS where they pretend he has a personality. There's nothing to get attached to with him beyond what you self insert onto him, and he doesn't even have the argument "well he should stay the same because you shouldn't change an established character" because every Zelda game has a new story, new setting new cast and new Link with a new design. The only time he was ever anything more than a stock JRPG mute player avatar was Wind Waker thanks to how animated that game was.
The only reason I can think of for it to not have a gender select is because it's tradition not to have one at this point, and if that's the best reason you can muster up for not adding one it's a pretty lame reason. The series doesn't even have to worry about voice acting since Nintendo never does it, all they have to do is rewrite the pronouns in the script.
Hell, I'd argue his tunic and the master sword are much more crucial to Link's image than his gender, and Nintendo was perfectly okay with doing away with those for Zelda U anyway.

I'd be perfectly good with adding a playable Zelda or Linkle instead of gender bending Link. It'd be way more interesting since they offer up their own unique abilities and Zelda would put a totally different spin on the story.
But if those weren't on the table I had to pick between either a boy/girl option or just a single default boy Link? I'd pick the gender option. A baby step forward is better than not taking one at all.
This would be a completely different story if they wanted to make Link a fleshed out character with his own voice, problems and arc, but after like 20 games I get the impression Nintendo has no interest in doing that.

On top of that, it's the worst Zelda fansite in my opinion. For years they trumped Majora's Mask around as the best game ever, and they would release once in a blue moon theory articles, that while good, weren't up to par with ZD's in quality or quantity.
