Baldur's Gate is a better balance of combat and story. First is more exploration focused though and the story starts off pretty slow. Icewind Dale is the combat focused one.

The gameplays in PST is all about talking to NPCs and absorbing the atmosphere. Combat is secondary. You will hear people talk about it like it's some kind of horrendous slog but that's not true, it just isn't particularly great, especially early in the game when there isn't very much variety to the kinds of combat tactics you can use. Later in the game when you've leveled up a lot combat is more interesting, especially if you play a mage because high level spells are extremely fucking cool.
Dialogue actually has failure options in it, and more variety in the types of options you can choose than probably any other RPG ever made. Responses are long and detailed. It's not just that the story itself is good, but also that characters are extremely vivid and memorable, and the setting has its own special flavor. Every area you uncover is something new to absorb in itself. Your goals and motivations are entirely personal throughout the game so you really feel like the way you play is meaningful. You could say that in essence the gameplay in Torment is the act of choosing who you want to be.
For your first playthrough, roll a character with decent wisdom and intelligence. You will get the most out of the story/atmosphere this way.
