Plot armour is when a character wins because they're the hero. Enemies make stupid mistake, they're always in the perfect position for the right attack etc.
The Chosen Undead's abilities aren't plot armour; plot armour would be almost getting killed by an enemy but then you don't die and they let you get a free hit instead.

When Undead die, they vanish and revive again elsewhere. Usually bonfires.
If they're not killed, they can still kill themselves by using the Dark Sign.
The Dark Sign is part of their bodies and cannot be removed.
Vengarl is just one of the many oddities that exist in the Dark Souls world and isn't an example of how Undead as a whole work.
