Leveling Strength and Dexterity makes a debatable difference if you do it enough. If you're using good damage scaling weapons then you could end up doing crazy amounts of damage to bosses in a short time or even one-shotting regular enemies. Either results in a more trivialized experience.
But leveling Vigor and Endurance? Well fuck the game is just over at that point. With high Endurance you can just shield block with no penalties and never take any damage if it comes to a point where you don't run out of stamina. With high Vigor you can survive multiple hits from bosses where normally only a few would wipe you out.
But leveling almost anything also increases your defenses so you end up taking less damage on top of all that.

Actually you can judge it based off of the game because there are some notable parts where being a certain level makes the most sense. The Watchdogs and Aldrich covenants operate optimally at certain levels, and since those two covenants are active in drastically different parts of the game you can use them to pretty actively judge what level you should be at any given point in the game. Watchdogs are most active at 25-40, which means you should be around level 40 if you've just beaten Abyss Watchers. Likewise, Aldrich Faithful have most activity around 60-80, which means you should be somewhere near 60, either a little higher or a little lower, by the time you face Sulyvahn.
Using those as guidelines you can scope out the rest of the game pretty easily. Cathedral is 30s since it's meant to be done before Farron Keep. Catacombs is 40-50, Irithyll and Smouldering Lake are 50-60, etc.
After that it gets a little more open-ended. When you get near level 70 you can basically beat the game. Anywhere from 70-100 is endgame, a very wide range. This is also where the PvP meta ties in.

Because you can beat the game at level 70? He's about a third of the way through and already at endgame level. The process of leveling up between 40 and 70 is supposed to happen naturally as you progress. It's obvious he was grinding for hours on end to get to that level at that point in the game.

The problem prevalent in this LP is that Pat tried to maximize profits while minimizing actual effort.
He wanted the views from people who wanted "First Time" reactions to stuff.
He wanted the views from the people who only care about Dark Souls III while it's hot.
He didn't want to have to restrain himself from playing the game.
He didn't want to put the effort out for a comprehensive in depth play through of the game.
