Have you ever thought about literally standing in front of Bastion with Genji while doing your E? He'll die in a second. You're not guaranteed to pull it off the first time but if you have someone who continuously obstructs him you should be able to progress.
You really shouldn't stick to one character in this game when things aren't working. Learn what counters what and adapt accordingly.
I see way too many people just picking Widowmaker or Tracer so they can get kills, these people absolutely don't get how the game works.

I'm enjoying the beta, but I have to say I'm really disappointed because I thought Blizzard was better at game design than this.

These are all cardinal sins in design for a multiplayer shooter that TF2 carefully avoided (though admittedly later on they seemed to completely forget that) and that no game designer should make. The game is like if some MOBA players tried to make TF2, and didn't understand that things that work in MOBAs don't work in shooters.
Though I guess I should have realized none of the experienced talent is left at Blizzard after Diablo 3.

It's bad design in a multiplayer shooter because it's incredibly unfun to have control taken away from the player. It's unnecessarily frustrating and can be accomplished with other means like area denial or some kind of ability blocking power.
Stuns are like taking the controller/keyboard away from the player for five seconds while they're playing. You're reduced to watching the situation play out on your screen and it increases the player's frustration and desire to stop playing.
It's different in an RTS or a MOBA where the player is not directly controlling the character, and is actually giving them directions, or a fighting game where being stunned is a punishment for making a mistake.
I agree with you on Bastion, though. I think it's bad design to encourage a player to not move, but the more I play Bastion the more I see reward for moving around and the more similarity to Heavy I feel.

Bastion just needs to not be able to heal in turret mode and have a cooldown on his conversion between forms. That'd solve a lot. Some damage applied on him would make him have to change forms and reposition to heal instead of just mopping you up and then healing in place without missing a beat.

I hate Lucio because he's a healer for people who truly aren't healers at heart. He passively heals around him without giving any effort. You don't even have to think about healing most of the time. Then he has a super that gives shields on top of that.
Lucio's long distance gun gives him tons of eliminations and his secondary stun blast helps get away along with his speed. So cheap.
When you are Mercy, healing is your life. You are truly dedicated to the art. Running around selflessly with no way to defend yourself trying to heal everyone. Her gun is useless against most players and you're screwed if teammates aren't looking out for you. You go out of your way to save people who don't even look behind to protect you.

If you choose mercy knowing full well that your partners are going to ignore you and let you and themselves get killed then you're taking part in your team's loss.
A healer has to have a team that works with them otherwise their effort is wasted and there might as well not be a player in that slot. Unfortunately if your whole team wants to try to be lone wolves then you have no choice but to do the same. It sucks trying to play support with people who just throw themselves at the enemies and go in solo trying to get one epic play of the game as if it will make up for their terrible performance the rest of the match, because trying to support those people is fruitless.
Lucio works because neither you nor your team really need to try to use the support/ make use of it. Zenyatta and Mercy really shine if you have an actually coordinated team, but otherwise they're not that great.

The tools Overwatch gives you to solve problems are contained in a single, brainless button rather than a complex and difficult set of movements and/or offensive measures. The entire game revolves around identifying the correct rock-paper-scissors situation to press your button, then pressing it. There is no serious skill of any kind involved. You're going through the motions of what you think a video game entails.
The miniscule difference between a week-old Overwatch player and a year-old Overwatch player will be lost in the cloud of instakill ultimates, teleports and AOE abilities. This game is transcendentally shit, and there is no escape from it. This is the very profitable future of FPS. Hell. Population: you.

Let's consider Overwatch's strategy merit compared to another the-player-controls-one-unit strategy game like DOTA. Each player has ~3 skills and an ultimate, so there's parity there.
The camera perspective isn't top-down, it's first person. This makes zero sense for a strategy game and inhibits the player's ability to get an overall picture of what's going on. The controls also make it impossible for the player to ever control more than one unit, like they can in DOTA.
There are no map resources to fight over - as a strategy game, the only strategic element is the win condition.
Overwatch is shit as either an FPS game or a strategy game. So it won't sell by its quality.

Imbalance. Like really really imbalanced. The ttk is WAY too low for the movement speed of the heroes and it is obviously made for console players to hit the slow moving targets and be able to kill them. Not gonna name specific heroes but some have insanely high ttk or even insta kills while others can pelt someone for a few seconds and then watch them heal themselves. Damage needs to be consistent among the different classes of heroes like tank and damage but it certainly is not. Also teleporters need to be removed cause that is stupidly OP in an objective based game with such ridiculously slow movement.
2 all high level play is is picking and counter picking. Or just going with a stupid composed team like a bunch of rienhardts mercys and bastions or whatever else. That is not even strategy it is just rock paper scissors with different types of heroes being almost completely unable to counter another no matter the skill of one or the other. There is almost no individual skill involved at all.

I tried him last night and had a really great game. He feels kind of like a glass cannon with the insane amount of damage he can do while he has his discord on someone. I'm able to one shot pretty much any non tanks with a head shot or two and can just do the charged orbs for tanks. I use him first as an assasin and secondly as a healer. But his heals are pretty great too. If he was a bit faster he would beat out Lucio.

Take it from someone who was very optimistic for this game and was in the alpha, you won't be for long. About 15 hours in there's a wall where you realize you can't 'progress' in it at all. Your training means nothing when JimmieJoe the twelve-year-old can press his R button and negate years of training fundamental positioning and aim.
This is a game for apes who want to fly around the map pressing their 'kill the enemy automatically for me' buttons and never learn anything.
Game needs a "no ultimates" mode and then a series of substantial buffs/nerfs to various things for me to want to love this game.
If ways to mod the game are ever implemented, some kinda toolkit or scripting of some kind where I could change all of the numbers in the game, I would dedicate a significant deal of my time making it happen and develop a lobby website for assembling people to play my special game mode in Custom Games.
I like a lot of things about this game, but in its current state it's pretty awful.

I honestly do not have to switch to deal with any other defensive hero.
The only time I need to switch heroes is when the other team is stacking a particular hero, so taking a hard counter is highly effective or when Bastion is picked.

Bastion is a level 3 sentry with a engie with a wrangler that can be deployed in a couple seconds and can be put anywhere in the map.
He is a better engie than the actual engie-like class.
