1. Archdragon Peak is likely in the past. If you look in the distance you can see Anor Londo but you can't see Lothric built yet. So is it a dream sequence in the past or actually taking place? Havel and Ornstein's armor are there so I figure it takes place around the same time as DS 1, right?
2. If worship of angels was banned in Lothric then why are the angelic serpent statues still up as well as the crowned angel statues you can see right before heading up to the Twin Princes fight? Why didn't they dismantle this shit?
3. I'm not understanding Leonhardt's actions and motivations at all. Help me.

This isn't bloodborne buddy. There is no day night cycle. The only reason Irithyll has a night sky is to compliment the design of the city and that's it.
This is also why Archdrake is so bright and white washed. It's to keep in theme with being so high up your in the clouds.
You have to remember this is made by the same people who made elevators take you into a Iron Keep flooded by lava in the sky.
DS2 and even DS3 in some areas have some of the worst geographical consistency and flow over any other Soulsborne game.

OCELOTTE IS THE ASHEN ONE
The royal family of Lothric, and eventually Oceiros, were trying to create a potentially "perfect" heir to link the fire permanently.
Oceiros attempted to use magic, his royal blood and dragons to create this heir by incubating this strange combined power within hollows/humans. Initial failures of this resulted the black ooze monstrosities emerging from them(they can only be found in Gundyr and lothric and 4 are guarding Oceiros). However later attempts resulted in what would become the unkindled who were able to harness the power of flame. I believe that Oceiros originally succeeded but believes he failed because the unkindled are buried.
The unkindled appear to die or are feared to turn into more monsters, and so are buried in the Cemetery of Ash/Untended Graves and likely other places where the experiments were carried out. So, the player is Ocellotte specifically for several reasons. You are buried very near Oceiros in the untended graves area. You are referred to as Ashen One by the fire keeper, ashen is an interesting prefix indicating magically altered items such as the ashen estus flask/ring. Finally Oceiros odd speech to the player during the fight gave me some of the most interesting evidence.
Oceiros when he is talking says "Oh, you ignorant slaves… finally taken notice have you? Of the power of my beloved Ocelotte, child of Dragons. Well, I will not give him up, for he is all that I have." Oceiros is not talking to you he is talking to what he perceives to be the forces using you. These forces are probably the Sable Church and Kaathe. Perhaps he does not want his son to link the flame/usher in darkness because of severe postpartum issues. Or perhaps he wants a different destiny than what he thinks you are doing. Though Oceiros has potentially also gone totally insane.

Just because it has different textures doesn't mean it isn't built off of the same land, If it looked exactly like Anor Londo with the same textures and brick patterns then they would've just called it Lower Anor Londo or something like that. And the npcs are shocked that you found it because nobody could get in before because only the people that live there know that you need a doll or where to get one. As for the inhabitants, they were human but have 'devolved into beasts'. So there is deeper lore as to why they are transforming into beasts, but they are/were humans. Personally, I think they're just trying to tease a little bit of Bloodborne into the game (people becoming beasts, importance on moonlight, etc.)

My question is just why is everyone in the last stretch of the game a fucking pushover?
After Aldritch is defeated, every single boss is a god-damn cakewalk. I beat each of them both as a pyromancer and a strength build, and it didn't change how simple they were to defeat. Dragonslayer Armour in particular is just a mess that is even easier than Iudex Gundyr. Literally impossible to get hit, and his little dragon angels do basically nothing.
The only bosses I ever had trouble on were Pontiff, Aldritch, and Nameless King. Even then, Pontiff and Nameless King are fundamentally simple to learn, they just have a variety of moves. Aldritch is just luck and tenacity. Don't know what it is, but it just seems incredibly easy to solo enemies in Dark Souls 3, as compared to how it was in Bloodborne or even the other Dark Souls games. Just compare any of them to Orphan of Kos or Ludwig. I sure hope the DLC steps up its game.

Champion Gundyr is easy peezy. He's the most standard enemy ever. He's basically like fighting a Black Knight, all you do is dodge the swings and then get a hit in. Repeat until dead. The transform on Iudex Gundyr was harder, especially considering one is a hidden end-game boss and the other is a tutorial.
The only hard part about Nameless King is the lightning coming out of the sky, since it homes in so perfectly to where you are standing. Even a roll won't get you out of the shockwave. Beyond that, he follows the same three or four swing pattern, and if you're lucky, he just lunges before leaving himself open.

They didn't change the lore, just the whole taking souls thing wasn't ever really part of the lore, the only souls you took were the lord souls for the kiln.
I think in canon the bodies don't just disappear like they do in game (it's just more convenient that way) and when the flame is rekindled the souls return to their bodies and the lord souls are given out lottery style. (Hence why the Princes refer to it as a curse).
The Ashen one has some sort of significance to the story of the game before the events of the game, several characters find you "familiar" like Yorshka but that makes no sense. Gyunderes armor description also is most likely not referring to you, but rather whoever took the sword out of the bonfire and impaled him on it.
I expect the Dark Souls III DLC to help paint a picture or show who the Ashen One was originally and what significance whoever he/she once was between the events of DS1 and DS3

Well there are a few things to note, for one they seem to have turned him into the monster he is now by torture, as evidenced by the abyss being in a prison (cells at the entrance and around the area).
Now if extreme pain can make someone into that, why hasn't it happened to anyone else that we're aware of? It would have to be someone with incredibly strong humanity - say, the source of it. It seems that the Pygmy did what Gwyn did and split his soul, which is what humanity is - a fragment of the dark soul. We see humanity sprites in the abyss and it's noted that the age of dark is the age of Man, and there must be some correlation even if Kaathe's lying.
So his humanity did go wild - it's just his was much more powerful, so is most likely the dark soul. Making Manus the furtive Pygmy.
