I like to make different characters based on the general build, I like to make an old and gray hardened and scarred war vet looking character and make him a str build with heavy weapons and a large shield. The sorcery play through is on an aged witch, who wears robes and has long white hair. The ranger bow and daggers run through is a young redhead girl with a scarred over eye, otherwise it depends on what ends up looking good in the character creator.

I usually play as females because it's more novel. That's it. For example, female Shepard in Mass Effect is a far more original and interesting character than male Shepard. There are tons of games wherein I play generic gruff male space marines / knights, but doing so as a female is a rare and refreshing experience.

I make both because I like variety in my characters. I've got a brown girl that dual wields DEX weapons and a jolly friar that uses heavy STR weapons and miracles. Sticking to just guys or just girls would be boring as fuck in a game where you make a bunch of characters.
