Ultimate Butoden for the DS is pretty good. Not especially deep, but fun. Supersonic Warriors on the GBA was good. Legacy of Goku II was good, but I haven't played it in years. I might not be remembering it well.

Legacy of Goku 2 and Buu's Fury (Legacy of Goku 3) are great action RPGs with lots of content that'll take you a while to beat.
Tenkaichi 3 (you can literally just skip 1 and 2) is a fantastic game with loads of content and quality gameplay.
Supersonic Warriors 1 and 2 are well worth playing but will require following a guide to see all the different story paths, which is worth it since the stories are crazy.

I know about the copyright issues with Budokai 3 soundtrack, but goddamn that music was fucking amazing! On top of the fact that theres no online mode and I still have my ps2 and the original game I passed on the HD collection. Budokai 3 is still a fantastic game and if you've never played it then you should definitely play it.
I will go play Ultimate Butoden for teh DS, also, One Piece Giant Battle is fun as fuck.

I'm watching DB right now, just finished the episode where Goku fights Gohan at Baba's. I'm loving it so far, but I'm worried that DBZ's going to get rid of all the hand-to-hand fighting/villains with unique powers and just resort to power level shit and overly-long Kamehameha buildups.

It's alright but after a while you'll realize you're spending hours grinding to create your perfect build for no reason because there's no content in the game to use your build in besides the shitty PQs you just spent hours grinding.
Also the City is just a main menu where you have to slowly run from option to option. Every single building in the City could have just been a menu option and nothing would have been lost.

Some does, but mostly the filler just ruins the pacing.
The Freeza fight is the worst with the absurd amounts of filler, you'll have episodes that are 75% flashbacks of the last 2 or 3 episodes, or even episodes with flashbacks from the beginning of that same episode.
It's also where the jokes about Goku screaming/charging up an attack for 3 episodes straight come from.

The story mode? Who the fucking cares about that board shit? The what-if characters was the best thing in that game(ok, along with the soundtrack) and one of the best things in all 3 Budokai games. For some retard reason they never added those what-if characters again in any game. There is also a japanese update of the game( DBZ 2V i think) with more characters.
And you don't need to play B2 to get everything, just get a 100% savefile and have fun dueling around.

It's not a matter of dubbing (although the English dub isn't that great for DB), it's a matter of the anime just being a piss poor adaptation. DB;s isn't too terribly bad, but Z is plagued by extremely inconsistent animation, god-awful pacing, and filler that's terrible more often than not.
Kai fixed some issues, but introduced a lot of its own. Some animation frames were completely redrawn, and they look like they were done in MS Paint. The original music for Kai was removed after the Namek arc due to plagiarism, and was replaced by the score of the original Z, which is placed terribly. They got a new composer for the Buu saga, but the soundtrack there is largely forgettable.
Kai also censored a few scenes, even in the uncut versions. Raditz's hole after he gets Piccolo'd is now pitch black and removes all of the blood from the original. Same with Goku's. Vegeta no longer coughs up blood when he's dying on Namek. There's probably other instances I'm forgetting as well.
The manga is the best version of the series, although all of the official English translations for the series were censored by Viz. No cussing, no nudity, etc.
