SS is just nice in this game, there's a lot.
Dark Sword, Lothric Knight's Sword, Long Sword, Anri's Straight Sword, Astora Straight Sword(at least early game.)
Then you have the sister weapon choices in Gotthard's Twinswords, Warden's Twinblades, Carthus Curved Sword, Estoc.
I wouldn't really say it's a problem with Dark Sword and it's more a combined weapon class. At the end of the day I see a lot of weapons work well and do their thing.
I was hosting a public fight club for a while, and after a hour I only saw 2 of these, both of which got fucking demolished (once by some Estoc dude who won like 9 in a row and someone else).
Is this just a good PvE weapon or what? I've yet to see a problem, looks like it gets outranged easily.

It's mostly a pve weapon since the moveset isn't perfect but it has good hitboxes and stomp can do stuff, it's not a terrible choice. it also does a lot of damage for its weapon class.

Yeah, I've literally never lost to a Dark Sword user. Estocs push my shit in or get rekt at about a 50/50 rate and heavy weapons (of all things) trick me with their hyper armour rarely but Dark Sword has consistently not been a problem.

The thrusts aren't important, the animations aren't important, it could be any weapon. What's important is this:
Slower, more risky attacks lead to longer combos.
You can't mash r1 for a combo.
Estoc doesn't reward R1 mash stun-lock like the rest of the series, or some shitty infinite attack loop (step loop in DaS3, push-lock kat, or Lance loop in DaS2).
Despite this it's still has competent comboing.

R2 and Dash R1 were roll BS able on reaction, and rolling R1 could be roll BSed easily if baited. The main poke in other words.
A non punishable weapon would have been BBS, Guillotine, Knight Sword, Kilij... Any super fast spammy R1 frametrap. Even Mirdan hammer had punishable R1s. Sounds like you weren't very good.

I've been doing pretty much constant invasions for the past 3 day, and I saw only a couple of people with dark sword. Shittion of people with Astora Greatsword, Great Axe and Estoc though, like 5 out of 10 people are using Astora Greatsword, yet I never see people complaining about it here.

Not compared to Kilij, Guillotine, BBS, Knightsword, Gaxe, Hammer, Kat, etc. Those were all better R1s for either frametraps or stun. In fact, every weapon there had an infinite except Kilij and Gaxe's was conditional.
DS3 Estoc is a frametrap mash... But DeS it wasn't a strong R1. It was a combo ender and that's it. I mean, do you even know anything about the games or is it just reaction images?
