There's a direct progression of the mechanics throughout the souls games (bloodborne excluded which went off at a tangent), so it can be jarring to play a later game and then go back to the earlier one.

Demon's Souls to Dark Souls is like Fallout 1 to Fallout 2.
They're both equally brilliant games, but the first one is a more compact, perfected experience with really fucking dense atmosphere and a smaller amount of memorable areas. Whereas the second one is a huge, sprawling world with much more development of the setting, more stuff to use and more stuff to do, but it loses the compact feel of the first game and the atmosphere is distinctly different, some would argue worse.
It's about what you value in a game. Want a tight, atmospheric experience? DeS. Want a huge sprawling journey? DaS.

I love that Bloodborne brought back the highly mysterious, surrealist weird as fuck atmosphere from Demon's Souls. It really feels like a sequel from that aspect.
I love Demon's Souls but I can easily beat it in a day. I like Dark Souls more simple because there's more game to be had, for better or worse.
