If you use dfhack commands to clean shit up regularly you can maintain playable FPS.
Mostly what I do is play a fortress until it's decently sized and self sustainable, then leave it and make a new one. I get caravans and migrants from my old forts and once I've played enough times I play adventure mode and visit my old forts.

I would just have people with a shield in front and situate the more squishy units in the back. You can get shields on your first trip to Eagrose, I think. Even if the Archers do manage to squeeze an arrow in, it'll probably deal so little damage so that you can back off and take care of them. Archers are pretty shitty units in general.

People playing the game for the first time? When I first played, I certainly didn't know the power of Monk. I wanted to make Ramza a Knight or a Dragoon, not some wimpy fist user.
Plus, even just having a decked-out Monk isn't enough. Gaff is still pretty fast and can get the advantage over Ramza easily. When I played, Chakra only restored about 65 HP per turn and Shadowblade dealt about 63, not to mention the lifesteal on the move, too.
Unless you Tailwind, (which you may not even have the chance to), Gaff will eventually get a double turn on you, in which case you'll be fucked. If you guys ARE on even grounds in terms of speed, then you still gotta micromanage between healing and attacking, and since your HP probably isn't high enough to survive more than 3-4 Shadowblades at that point, (even less if you decide not to get the Heavy Armor equip for Monk), the damage that you ARE able to deal to Gaff without dying will probably already be recovered by the time you can get another one in. Oh, yeah, and your attacks have a pretty low accuracy, too. And that's not even getting into the battle on the OTHER SIDE of the gate.
Nowadays I can beat him no problem with a little elbow grease, but the first time around it made me want to quit. Maybe I was just bad, I dunno.

I had similar problems with him and died like 5 times using shield. After that I said fuck it and just started rolling behind him instead of blocking. This way he missed with his combos most of the time and at the end I could do 2 or so fast attacks. Repeat - win.
