If the argument is that Dark Souls is what Zelda series should have become, I'm assuming that we're talking about a gradual transition from the first game instead of "when it made the jump to 3D" or whatever.
The core Zelda design could be described as something like:
You play as an empowered character who collects items and tools necessary to expand his methods of interacting with a non-linear world in order to complete a series of trials and finally unlock a final battle. All of this is framed by a traditional "boy saves girl" story, lending it a fairy tale-esque atmosphere that influences key design decisions and prevents the series from ever becoming too dark for its own good.
Taking that design, you can then extrapolate it to every game in the series to some degree (sans, perhaps, the multiplayer side games and II). However, the same could not be said for Dark Souls, as it goes against most of those design tenets.

Enemy movement and attacks is very deliberate.
Explore a mystery world filled with warps and hidden secrets.
Acquire various shields and swords and armor in dungeons which end in fun boss battles.
You have to beat these bosses to reach the final one.

But, hey, whatever floats your boat. There are so many soulslike games coming out nowadays, that one of them may eventually finally catch that dragon that I've been chasing ever since I beat the first Zelda.

Just be patient. Use your shield, block, attack when your enemy gives you an aperture or when he's in the middle of a recovery animation. If it's a humanoid enemy go for the backstab.
Use the weapon you feel more comfortable with; nearly every weapon, even the starting ones, are viable even in the endgame as long as you keep upgrading them.
