Because it's a system of Risk Vs. Reward. Being Embered gives you what, 30% bonus health and the ability to summon 2 phantoms(unless you're at like 99 hollow or whatever).
The downside to that is being open to invasions, and why is that annoying?
Invasions have been around since Demon's Souls, and people like you still act like it's bullshit that they exist.
For me personally, aspects of invasions are annoying, but I still respect the system.
I dislike that invaders have to make me drop everything I was doing, and fight them before I can move on, unless I want to make a mad dash for the boss room, and keep a good amount of Estus.
Invasions can be fun though if the player isn't lag teleporting or sliding, and doesn't want to hide behind enemy mobs the entire time. Even better if they don't chug estus.
However, I think PvP in the Souls series has had plenty of room for improvement, covenants too, and both have been left in largely the same condition as the first iteration.

I really miss BB's moveset variety, every weapon (although few and far between) felt so varied and powerful, weapon arts almost gimped weapons since every weapon is just X weapon moveset with a different weapon art.

I have few friends I play in co-op sometimes, everytime someone invaded we would just fight them 1v1 while rest of us sits and watches, if that guy died next one would go until only host remained, I always hope they would at least try to do something similiar, but always it's just a ganksquad.

I've just been using iron skin+sacred flame and heaviest armor against these ganksquads. Sometimes i get the host sometimes i get someone else in my grab of death.
I used to run around all out range pyro with obscuring ring waiting for an opportunity but 8/10 groups aren't progressing through levels and are just waiting for invasions.

Only thing thats hurt when you lose as an invader is your ego. You want fair fights use red signs, otherwise play dirty back at them and stop worrying about the win so much. You dont always have to win. If you impede the hosts progress killing his phantoms/forcing him to use all his estus/go back to the bonfire thats just as good as a victory unless youre a tryhard autist.
But the pussies who gank red sign invaders are the lowest of the low.

My only advice is turn down the lighting settings but I don't think that's your issue if you're running a 970. I'd try it though since apparently it's causing crashes for some.

What's the upper limit for who you can invade?
I'm on NG++ and every time I get invaded they do very little damage to me and I end up two-shotting them.
Makes me feel like I'm getting much lower level invaders, or nobody puts points into vigor. Invasions happen once in a blue moon at this level, regardless.
