use a lightning resist shield, dodge the fire breath in the drake phase. when he does the thing where he shoots a lightning bolt down on you by holding his weapon, just roll spam. if he holds his weapon backwards to charge, it's either gonna be the AOE lightning or a charge, so just roll to the side, don't block it, the rest are just predictable 2-3 hit combos.

Get some Carthus Rouge as you already got a bleed weapon and it basically makes it better.
Don't know how your dying to the dragon phase as thats fucking easy and each attack is highly telegraphed (just stall on after rolling under the first sweep attack to see if a follow up is coming)
Second form you can always punish after an overhead smash. His most common combo is Swing+Swing+Overhead smash. Sometimes he doesn't do the overhead but you can still get a hit in. You just have to stall at times to see if he's following anything up. ALWAYS expect after a dash slash for him to dash again with a follow up. If you see him do the charged lightning overhead smash (the one that has bolts come out of the ground a couple of seconds after) just start wailing on him as he always starts charging a thunderbolt that is really hard to dodge. Usually get a free stagger+riposte from that.

I believe the games take place during the fading of the fire, after the civilizations have been and declined, and the majority of their citizens being killed or afflicted by the undead curse, and all that's left is to relink the fire and begin it anew. Although there is evidence that there were living civilizations during the events of Dark Souls 1, presumably they're far off countries and aren't affected by Lordran.
