Fire Emblem'll obviously be a Gacha game with some SRPG elements. They already have a lot of character art from FE0. It's the most lucrative business model in Japan's mobage sphere.
Animal Crossing I bet will be like the GBA Island minigame from the Gamecube's AC.
Neither of them will be overly similar to the entries you see on handheld and console, simply because those two franchises, AC especially, have helped push their respective platform. Just the 3DS obviously, in FE's case.

Both games seem like they would work well on mobile devices, so it should work out. The concerns about microtransactions killing them is still a question, though. We already have seen DLC for the last two FE titles, so no real surprises there.

I disagree, the dialog overall is watered down compared to PG and WW. Also they strait up give you ways to make tons of bells with the bug island and the money-maker perk, whereas in the other ones you have to work your butt off and fill your town with exotic fruit to become rich. I dunno, there are certainly mobile games that don't feel watered-down. Love Live and that Yokai Watch puzzle game both feel like full handheld games, with the only exception being the "X plays a day" bullshit. If the Fire Emblem game took the Love Live approach of being a fully-fledged game with an optional real-money trading-card-gambling mode to leech money from the completionists (while all the actual stages and shit are accessible through normal play), I'd be content.
