Pontiff is pretty bullshit. While baiting bosses into doing exploitable attacks has always been an option if you were capable of doing it, it's outright required to beat him.
Also, make sure you kill that phantom as it's being summoned. Can't stress that enough. While the phantom helps somewhat because it telegraphs the next attack, it takes away that half second you have to retaliate.

First form: Circle strafe to your left, his right with shield that has good fire, magic and physical defenses, Dragoncrest is great. Let your shield down between attacks and learn which attacks don't hit you when doing this to regen stamina easier. Then just attack when you have enough stamina and he has stopped attacking.
Second form you can fucking cheese with arrows if you want, it's easy as heck.
Just beat Aldricht, considering all the fucking setting up for this, the fight was really disappointing difficulty wise but I liked it. He takes massive fucking damage to the Gwyndoling puppet part, I burned through his healthbar without Aldricht teleporting once in his first stage. Second wasn't much harder, just rush him when he appears, he can't do jackshit if you get close.

I beat hardcore act 4 pre nerfs with an easy as fuck facebreaker build I stole. I quit after that though because the build was also boring as fuck.

How I beat him (solo):
Level up vigor to get some hp (this boss killed me almost everytime until I did this because I didn't level vigor up until this point).
Stick close to him and kind of dance around him a bit. His combos are long, and if you're too far away he'll hit you more, but if you're closer to him, you can just sort of move around and he'll miss you more often.
Watch out for his backslash move when you're behind him. Shield that shit or dodge it.
Have a good amount of flasks (I had 10) and take some sips when you can, this becomes a lot easier during his second phase.
His second phase he becomes a lot less aggressive, but he has that phantom double. It's easier than it looks because the attacks are just synchronized flashy shit. There's like 4 different attacks they do, and if you take your time and analyze them, they're easy to avoid.
Use ember as last resort for full health refill and extra health.
I was also using an upgraded halberd and a 100% physical defense shield.
I was mostly shielding for the fight, and always a good strategy for shielding is to stop guarding between enemy attacks so your stamina recharges faster.

Pontiff is a punk when you knock out his doppelganger, Abyss Watcher is bent over 24/7 ready to get chained backstabbed, Nameless King, Dancers and the final boss telegraph the ever loving hell out of their attacks, and Aldrich melts at the site of fire.
Every other boss is either a gimmick or that fucking easy. How people say this game has the best bosses is beyond me.
