You remove pairs of tiles with matching symbols until you've removed them all. When I was little, I didn't have much strategy besides "walk up and hit him". I didn't try to dodge, I didn't study his attacks. I didn't really pay attention at all to WHAT the boss was doing, just tried to drain all their health before they drained mine. That combined with the fact that I would skip fighting as much as possible, so I didn't really level up.
When you're older, you know more about how to fight bosses and the importance of grinding here and there.

Another anon but that was my problem, the sorceress only mentions the trap spell if you haven't already destroyed a tentacle. I thought the crafted quest trap was recoverable, used it immediately and spent the rest of the fight alternating between trying to pick it back up and doing fuck all damage to the boss.

I think it was a combination of what others anons said (lack of healing) and it was your first serious fight with two targets. You could focus on defeating Stealth Sneak to make Clayton easier to deal with (while avoiding Clayton's shotgun), or focus all your efforts on Clayton and avoid the Stealth Sneak. Depends on what strategy you take and if you're prepared for executing that strategy.
Cerberus gives me trouble nearly every play through. I think it's because I have trouble with the camera and attack from the front instead of the sides/back.

That's intended, you have to breed or at least catch monsters from the later tiers to finish the game. Monsters have stat caps based on what generation they are. A slime+1 will always end up better than a base slime no matter what the parent's stats were.

I found it easiest to make Goofy and Donald tank the monster heartless while I made Sora focus beatdown the shit out of Clayton, then when he's down the fight becomes infinitely easier cause you don't have to deal with bullets that stun / knock out 1/3 of your health.

The only hard part about it was not having scan.
Not knowing how much longer I had to fight for and how to spend my mp/items without knowing a head of time how long the fight would take was a pain.
I was 9 so I guess I applaud myself for getting this far, but holy shit I NEVER got to finish the game and I was so close.
The enemies in the crystal tower always tore me a new one so I'd only have like 15 potions left for the boss battle. I'd always exit, buy 99 potions, go back in, use 3/4s, exit, rinse-repeat.

In case you ever want to revisit FF3 here's a tip: The job system experience is based on actions per fight so it's very easy to level up jobs.
1. Go to an area where you can kill enemies with one hit
2. defend for 5 to 8 turns.
3. kill the enemies.
It's a guaranteed job level up. If you can invest the time the final fight becomes a cake walk.

It was challenging, but not impossible. Make sure to enter the room with some weapon. I've did with shotgun and 3 shells.
Actually You can go a little back outside the screen to avoid getting aggro while shooting.
