Pontiff is the only boss that really pushed my shit in, I'm still ultra salty. I nailed Nameless King on my forth time, and wrecked Dancer, Lothric, Watchers, but fucking Pontiff man.. It's the one and only boss in the entire game that forced me to do a complete 360 on how I approached the game, I changed my gear, build, weapon, tactics, everything to counter him specifically and when I finally beat him I felt nothing, not a damn thing besides reservoir salt.

I beat the dancer my first try, but the abyss watchers gave me some trouble.
I summoned for Pontiff because I didn't like that he summoned an afterimage.
I thought the fight was perfectly fine without it being 2 on 1.
I'm sure there's strategies to beat it but I already had this thing where I was sick of the game throwing ganks at me constantly so when the boss did it I said fuck it and summoned.

Shields have their uses in DS3. Just don't use them as a crutch like you did in DS1.
A mix between rolling and blocking seems to hit the sweet spot for most enemys. Shields are garbage for PVP though. Unless you use the "brick wall" type shield that you mentioned.

did you ever put a few points into strength/dex to be able to wield at least a longsword? it's probably the biggest mistake first time sorc runners can make, you NEED a back up sword for enemies with strong magic resistance.

You can roll through the breath that he charges up while on the ground. Just get the timing right and you have enough time to run up and hit him a few times or with a good heavy attack.
For the one where he flies up and breathes fire on the ground you just need to be far enough away. Don't stay under him, just go for the head after you dodge an attack.

I do as well, and i choose based upon the boss, sometimes switching between phases.
Most of those hit combos single hits can be avoided by proper positioning. Normally 1 and 6 cant be avoided, but hits 2-5 can be without rolling.
