Imagine a standard fantasy setting with say, a wolf. You walk up to it, it notices you and rushes to attack.
Now imagine that wolf has programmed behavior like showing teeth or growling at you when it notices you, it feeds on that sheep it killed, has a pack nearby, has young, and when you hurt it enough it tries to run away.
Of course it's not really "human" in this case but you should get the idea.
This is why most stealth games end up promoting your badass guy #382 as a saint that never kills innocent guards, just knocks them out instead. If you have to program human behavior those enemy entities seem that small bit more human to you, and you don't want to kill them like those automated attack bots with different skins that most games have.

Gothic does that, except the running away part. Low level humans run away after you hit a certain chapter however.There's a faction you can have friends in that betrays you later, killing the head honchos really gives satisfaction.
Animals generally growl at you when they see you and some fight each other on sight. Didn't stop me from murdering each and every single one though.
