Astraea is still one of the most thematically interesting things in the series. She's a saint that became a demon to have the power to heal the sick. However, her "healing" results in further grotesque things coming to the swamp. She truly just wants you to go away and is disgusted by your greed when you do not. However, she's sitting on a pile of gold and continues to suck up the souls offered to her as gifts by the depraved.
It's a complex thing.
Yuria, Garl, Ostrava, Quelana and the Doll. I guess I kinda like Yuria and Fire Keeper from DeS3 as well.

Came here to post this. Man Ostrava was a well written character. So happy that From brought back some of the Demon's Souls charm to Dark Souls 3.

The outright explanation of so many things from past games being in DaS 3 is that every Undead that didn't link the fire and DID link the fire is being risen from the dead by the bell tolling from the fire fading which is why all of the Lords of Cinder are alive as well alongside NPC invaders like Kirk and Alva.

Thats actually explored with the new Carim people and specifically Eygon's armor description.
A Carim Knight will loyally serve and protect a maiden for life as is the case with Eygon and Irina, and Lautrec with his goddess Fina.
I don't think its stated Leonhard is from Carim but he does something very similar to Lautrec where he kills Rosaria leaving a Black Eye Orb where you can invade him in Gwynevere's old throne room, suggesting he was trying to use Rosaria's soul to bring back Gwynevere.
