I use a Great Club. I think I do alright in PvP, enough to get by most people though I get outskilled pretty bad every now and then.
If I get a single two handed club attack onto a person, I can guarantee a second hit since they're stunned that long.
What I want to know is, how the hell do I prevent them from using an Estus Flask at that point. After the second hit they predictably roll away, and I just walk after them (being right in their face) but I do not know how to follow up. They seem to just wait for me to prepare an attack, so they can roll away and Estus up.
What's the solution to this? Do I just need to get better at Great Club and predict where they're roll? Do I switch to a different weapon? After the 2nd club hit they're usually left with 30% or so HP, or dead if they have cloth armor (which never happens). I tried those undead hunter charms to prevent Estus use but they generally miss, or I'm just bad with them.

Either throw a hunter charm earlier or just let it happen. All the weapons right now can only get two hits and then the guy has a freeroll, if he wants to, so you need to be sure to kill them with two hits.
