Mods barely change anything than a few camera angles during cutscenes and fix few arbitrary bugs.
Try playing vanilla and you will not see the difference, don't feel bad though, you are not the only one who fell for the unofficial mod meme.

Is it even possible to make it more boring, vanilla and empty than vanilla Skyrim? I was just checking out a video, so I have no clue if it falls short when exploring the new stuff in depth, but it makes everything look so fresh that I actually want to reinstall Skyrim just to explore everything they added.
