The Abyss Watchers by far. The first boss you actually have to respect to beat, it's hype as shit, and lorewise it's cool as shit to see what happened to the undead legion.

Soul of Cinder was definitely my favorite in terms of presentation and design, but he also felt really easy. I pretty much stomped him first try going in blind with my SL68 Great Machete build.

Fuck me, that took like 2 hours but it was so much fun.
Of course, I dont use shields and give zero fucks about armor or status resistances, so they could have been easier if I wanted, but it was still a pretty sick boss fight.

Aldritch and Old Demon King were pretty fun, not too challenging though. Still they were great bosses.
I can't really grade Abyss watchers, since I was too overleveled for them due to missing their area. They died on my first real try.
Ludex and Rotten Greatwood were boring. Vordt was way too easy and could not hit you at all if you stayed under him, which is a shame because his fight could have been amazing with a few tweaks.
Everything else has been so shit I can't even remember the bosses name, except maybe the giant skeleton guy, who I think was named Waldo or something.
I'm on Yhorm right now, and he is probably the most disappointing boss in all the souls series, even more than Dragon God, pinwheel, all of dark souls 2's bosses, and celestial emissary. I don't know what the fuck they were thinking. He has a moveset, looks amazing, especially when he embers up, and if they fixed his shitty tracking and gave him a few moves to not make him easy as fuck to dodge, he could have been a great boss, but nope, they just gave him an unreasonable amount of health, and gave you storm ruler to kill him in 5 hits because DUDE REFERENCES LMAO.

I had so much trouble with his first phase I thought for sure there wouldn't be a second one. Then it happened and I had my shit kicked in. But because I had done it so many times I was consistently getting to his second phase.
He's also actually one of the more forgiving bosses (many low dmg attacks) but he is fucking relentless. Great fight.

Spent the vast majority of my souls on upgrading weapons and buying new armor. I never really felt underleveled, and I only lost around 20k souls to deaths now that I think about it. Also, most of the last half of the game I just dodged past enemies rather than fighting them, it didn't really seem worth it past a certain point.
