Because the first three CoD games were kinda average? Like, there were areas for improvement. The Souls games kinda got it right the first try and It's only added or removed minor things like soul memory is DaS2 or the fact that weapons breaking is basically an impossibility or making switching covenants easier in DaS3.

I don't want to say they're 'perfect games' but they have a formula and it works. Look at Pokemon, the biggest innovation we got there was just adding more Pokemon to battles after 20 years.
