the best in-game economy right now is in Path of Exile. It may look like an ARPG but make no mistake, it has the most complex, intricate, active, and exploitable economy ive ever seen.
Core game is pretty good, but i play almost solely for the fun of economics now

Offworld Trading Company if you don't mind something that is more about skirmish-style <60 minute games than a long campaign. It's only early access for another couple of weeks, has basically been feature-complete for months and currently has the review build available. The AI can be brutal as all hell.
