Killing Floor 1 and 2 have preddy gud AKs, being the mid-tier Commando weapons.
STALKER trilogy has AKs74U as the lowest level "Assault rifle" type, and the full-length AK74 as the early proper rifle, that is already enough to get you through the game if you so desire. Especially once you pop a scope on one, and load it up with AP ammo.
And of course, Counter-Strike's AK is pretty legendary.

Open world Bethesda game, Mad Max-wannabe called RAGE has a really satisfying make-shift AK. Basic rifle but it is, just as the real life counterpart, the workhorse of the game.
