Stop trying to go for realistic, I'd say. The better choice would be to go for stylistic instead. Use unique art styles/directions to make visually interesting games, instead of trying to push technology to it's very limit to render only the finest brown dirt.
It's like how Wii U games don't look too bad, despite being vastly inferior hardware wise. They went for style over realism, it worked quite well. Look at Xenoblade Chronicles X. Even if it has the textures of a PS2 game sometimes, the game can still be amazingly pretty like when you see Noctilum for the first time.

The problem with this is that it would require proper artists, and the people producing games loathe artists. They only want workers.
